BCO CARAMELISED CHILLI CROISSANT & CHEESY BURRATA EGGS

SERVES: 2

TIME: 15–20 MINS

 

INGREDIENTS:

2 croissants

4 eggs

4 teaspoons honey

40ml Banhoek Chili Oil, divided

2 burrata cheese, drained

Sprigs of dill, to garnish (optional)

 

COOKING METHOD:

Flatten the 2 croissants with a rolling pin until they are completely thin and even.

Heat 20ml Banhoek Chilli Oil in a frying pan over medium heat. Add the flattened croissant to the pan and fry until the bottom is lightly golden brown.

Flip the croissant, fry the other side, and then drizzle 1 teaspoon honey over the top. Flip again, drizzle with another 1 teaspoon of honey, and continue frying on both sides until the honey caramelises into the croissant, creating a thin, crispy, slightly spicy finish.

Repeat with the second croissant, using the remaining 20ml chilli oil and 2 teaspoons honey.

Meanwhile, bring a pot of water to a boil. Lower in 4 eggs and cook for 6½ to 7½ minutes, depending on your yolk preference:

6½ minutes: jammy yolk

7½ minutes: soft-set yolk

Immediately shock the eggs in ice water, crack the shells with the back of a spoon, peel, and halve the eggs.

To plate, place each caramelised croissant onto a plate, tear open a burrata, and nestle it onto the croissant. Add the jammy eggs around the plate and finish with a generous drizzle of Banhoek Chili Oil. Garnish with dill, if using, and serve immediately.

NOTES & RECOMMENDATIONS:

Banhoek Chilli Oil  and honey caramelise beautifully, so keep the heat at medium to prevent burning. For a more set yolk, add an extra minute or two to the egg cook time.
