Our rich and hearty take on lasagne is the perfect choice for the ultimate comfort food. With golden, crispy lamb, silky tomato sauce, and tender shards of pasta, all finished with melty mozzarella and parmesan. It’s a warm and wholesome dish that promises to bring the perfect bite of flavour.

INGREDIENTS:
1 onion
3 garlic cloves
1 mild red chilli
20g parsley
1 tbsp Banhoek Chilli Oil
500g lamb mince
1 tin tomatoes
½ tin water (use the tomato tin to measure)
8 lasagne sheets
1 ball fresh mozzarella
50g parmesan
METHOD:
Finely dice 1 onion and 3 garlic cloves. Thinly slice 1 mild red chilli and finely chop 20g parsley, setting half aside for garnish.
Heat 1 tbsp Banhoek Chilli Oil in a large, heavy-based pan over medium heat. Add the onion, garlic, and chilli, stirring to coat in the oil. Cover and cook for about 8 minutes, stirring occasionally, until soft and jammy. If the mixture starts to catch, add a splash of water or lower the heat slightly. Once softened, remove from the pan and set aside.
Add a little more oil to the same pan and turn the heat to high. Add 500g lamb mince, breaking it up with a spoon, and cook until browned and crispy. Return the onion mixture to the pan, then pour in 1 tin tomatoes, breaking them up with a wooden spoon.
Rinse the tin with ½ tin of water and add this to the sauce. Cover, lower the heat, and simmer for at least 15 minutes—or, ideally, up to an hour, adding more water as needed. The longer it cooks, the richer it gets.
Bring a pot of salted water to a boil. Break 8 lasagna sheets into large chunks and add them to the water, stirring for the first few minutes to prevent sticking. Cook until very al dente, then drain, reserving some pasta water.
Add the cooked pasta to the lamb sauce along with a splash of pasta water, tossing everything together over low heat until the sauce thickens and clings to the pasta.
Tear 1 ball fresh mozzarella over the top, scatter over half the parmesan and half the chopped parsley, then cover with a lid and let it sit for a few minutes until the mozzarella melts.
Remove from the heat, scatter over the parsley, and serve immediately, dusted with the remaining parmesan.
