INGREDIENTS:
3 cups mashed sweet potato, cooled
1/3 cup flour
1 egg
1 cup milk
2 tbsp Banhoek Chilli Oil
Salt and pepper, to taste
For the toppings:
1 avocado, mashed
½ cup crème fraîche
1 tbsp fresh chives, finely chopped
2 tbsp Banhoek chilli oil (for frying eggs)
6 eggs
METHOD:
Prepare the waffle batter:
In a large bowl, combine the mashed sweet potato, flour, egg, milk, Banhoek Chilli Oil, salt, and pepper. Mix until well combined.
Cook the waffles:
Preheat and lightly grease your waffle iron. Once hot, spoon in the sweet potato mixture, spreading it evenly. Cook for 7–10 minutes, or until golden brown and crispy (cooking time may vary depending on your waffle iron). Remove and set aside—the waffles will crisp up slightly as they cool.
Prepare the toppings:
In a small bowl, mix the crème fraîche with the chopped chives and set aside.
Heat Banhoek Chilli Oil in a pan over medium heat. Fry the eggs until the edges are crispy and yolks remain runny.
Assemble the dish:
Top each waffle with a dollop of chive crème fraîche, mashed avocado, and a crispy fried egg. Serve immediately and enjoy!
