A show-stopping dessert that’s as beautiful as it is delicious! This light, airy pavlova is topped with a medley of fresh, juicy berries and finished with a bold drizzle of chilli-infused caramel made with Banhoek Chilli Oil. The perfect balance of sweet, tangy, and spicy, this pavlova is an irresistible centerpiece for any festive gathering.

INGREDIENTS:
6 eggs
1 ½ cups castor sugar
1 tbsp corn flour
2 tsp white vinegar
1 tsp vanilla extract
¼ cup brown sugar
50g salted butter
½ cup cream
2 tbsp Banhoek Chilli Oil
1 cup whipping cream
3 fresh apricots, sliced into wedges
3 cups fresh berries (raspberries, cherries)
METHOD:
To make the Meringue Pavlova:
Separate the egg whites and yolks. Place the whites in a large bowl and reserve the yolks in the fridge for later use.
Whisk the whites until stiff peak and then slowly sprinkle in the castor sugar a little at a time, rubbing a little between your fingers each time to feel if it is incorporated and then continue. Once all the sugar has been incorporated, mix the corn flour, vinegar and vanilla in a small bowl and then whisk it into the meringue.
Preheat the oven to 140’c.
Trace a side plate size circle on a piece of baking paper and place it circle side down on a baking tray. Use this circle as a guide for spooning the meringue on the tray.
Optional – reserve 1/3 of the meringue and place in a piping bag fitted with a star nozzle and pipe around the edges for a more detailed design.
Place the pavlova meringue in the oven and turn it down to 100’c and bake for 60mins.
Turn off the oven and allow the pavlova to cool in there for 2hrs ideally.
Make the Caramel Chilli Sauce:
While the meringue cools, combine and mix the brown sugar, butter, cream and Banhoek Chilli Oil in a small pot and place on a medium heat and simmer until slightly reduced and the sugar has dissolved. Remove from the heat and allow to cool.
Serve the meringue:
Whisk the cream until stiff peaks and spoon onto the baked meringue. Top with fresh berries and apricots and then drizzle over the caramel chilli sauce.
Cut into slices and enjoy with family and friends.
