BCO CINNAMON CHILLI CHELSEA BUNS

This recipe features a soft, fluffy bread infused with a hint of spicy warmth from Banhoek Chilli Oil, balanced by a sweet cinnamon-sugar filling. The bread is topped with a luscious cream cheese glaze for a rich finish. PREP & RISING TIME: APPROXIMATELY 2.5–3.5 HOURS
COOKING TIME: 20–25 MINUTES

 

INGREDIENTS:

For the Dough:
450g white bread flour
7g instant yeast
1 tsp salt
50g sugar
250ml warm milk
1 large egg
35g unsalted butter, softened
2 tbsp Banhoek Chilli Oil

For the Filling:
65g unsalted butter, melted
2 tsp ground cinnamon
100g soft brown sugar
Glaze
250g cream cheese
1 cup icing sugar
¼ cup milk 

METHOD:

Make the Dough:
In a large bowl, mix flour, yeast, salt, and sugar.
In a jug, combine the warm milk, egg, butter, and Banhoek Chilli Oil.
Pour the wet mix into the dry and bring together into a soft dough.
Knead for 8–10 minutes until smooth and elastic.
Cover and leave to rise in a warm spot for 1–1.5 hours until doubled in size.

Prepare the Filling:
Beat melted butter, cinnamon, and brown sugar into a smooth paste.

Roll & Fill:
Knock back the dough and roll out into a rectangle (approx. 30cm x 40cm).
Spread the cinnamon filling evenly over the dough.

Shape the Buns:
Roll up from the long edge into a tight log.
Slice into 9–12 even rounds and arrange in a greased or lined deep baking dish.
Cover and prove for another 30–45 minutes until soft and puffy.

Bake:
Preheat oven to 180°C.
Bake for 20–25 minutes until golden and cooked through.

Glaze & Serve:
Using a handheld beater, beat the cream cheese and icing sugar and then add the milk until smooth or desired consistency.
While buns are still warm, spoon over the glaze and let it set slightly before serving.
